Chicken with mushrooms and extra virgin olive oil
For the Chicken with mushrooms recipe for 4 people.
- 1 Chicken
- 400 gr. of mushrooms for the filling of the chicken with mushrooms
- 100 grams of mushrooms
- Bread (crumb)
- The chicken liver
- Extra virgin olive oil
- A few branches of chopped parsley
- 1 small onion, chopped
- 1 glass of brandy or dry martini
- Garlic, laurel, parsley and salt.
The chicken is prepared.
Start preparing the stuffing:
Heat a small glass of milk and put a breadcrumb the size of a small lemon to soak in the milk.
Heat a little olive oil in a frying pan and add the 100 grams of mushrooms (already cleaned and cut into pieces), turn them over a few times.
Add the chicken livers to the pan.
When they are fried (3 minutes) separate the pan from the heat and mash the livers well in the same pan with a fork.
Add the bread crumbs soaked in milk, the chopped onion and the parsley. Mix everything well.
Add a little salt to the chicken and add the filling. Once it is stuffed, sew it up so that it does not come out.
Put some olive oil in a saucepan and place the chicken.
Heat the brandy and light it with fire to flambé the chicken.
Place the 400 grams of mushrooms (cut into large pieces) around the chicken and add salt.
Add a small glass of warm water and the herbs (laurel, garlic, parsley..)
Put the covered saucepan in the medium oven for about 30 minutes and another 20 minutes the saucepan uncovered even stronger.
Once the chicken is done, cut it into four pieces and spread the mushrooms around.
