1. Sun-dried tomato oil
To prepare our first flavored olive oil, we will need four parts of extra virgin olive oil for each part of dried tomato. You can use the type of tomato you like best. For a spicier touch, we recommend adding a teaspoon of whole peppercorns. Once all the ingredients have been added, place the mixture over very low heat for five minutes. Allow to cool and bottle.
2. Rosemary flavored oil
The elaboration of the following flavored oil follows basically the same procedure. We are going to prepare it with four parts of extra virgin olive oil for each part of clean fresh rosemary. It is mixed over very low heat for about five minutes. Let it cool and bottle it in a preferably glass container.
3. Garlic flavored olive oil
Peel 4 cloves of garlic and cut them in half. Put them inside the container along with some peppercorns and a bay leaf, and fill with 1 liter of extra virgin olive oil. Let it rest for 1 to 2 weeks, depending on the intensity we are looking for. The longer we leave it, the more intensity it will have.
