Your traditional Pumpkin Pie with an almond twist

Pumpkin pie is one of the most famous pastry recipes in the United States. You have probably seen it on countless occasions in American series and movies. In addition, pumpkin pie is the ultimate autumn and Halloween dessert.

If you’ve always wanted to know how this delicious autumn dessert tastes, and you’re looking for a different and special twist, keep reading!

The pumpkin pie recipe is based on its characteristic pumpkin flavour (as its name suggests), but in Lidaria we wanted to give it a special touch that will make THE difference and surprise everyone. We will achieve this twist by using a sweet almond-flavoured EVOO to prepare the base of the pumpkin pie.

The blend of the distinctive aroma of sweet almond, with the texture and flavour of the pumpkin, will make the Lidaria-style pumpkin pie become your new favourite dessert for this season.

This recipe is meant to serve between 6 and 8 people and has a cooking time of approximately 1 hour.

Ingredients for the Pumpkin Pie:

 Base ingredients

  • 110g whole wheat or semi-whole wheat flour
  • 110g oat flakes
  • 1 egg
  • 50g sweet almond flavored oil
  • Warm water

Filling ingredients

  • 600g peeled pumpkin
  • 60g almond powder
  • 3 eggs
  • 150ml of milk (can be animal vegetable)
  • 4 table spoons of honey
  • 1 tea spoon of cinammon
  • 1/2 tea spoon of ginger
  • 1 pinch de 60g powder nutmeg
  • 1 pinch of salt

Pumpkin Pie Preparation

  1. In a bowl, mix the flour, oat flakes, egg and sweet almond oil. Mix the dough by taking the product in small quantities and rubbing it with the palms of your hand.
  2. Gradually add the warm water until a homogeneous dough ball is formed. Roll out the dough and place it in a cake pan, making sure to cover the edges well.
  3. Preheat the oven to 180°C. Peel the pumpkin and remove all the seeds. Then cook it in boiling water or steam for about 20 minutes. The pieces should be very tender.
  4. With a blender, blend the pumpkin (you can puree it if you don’t have a blender). Add the eggs, powdered almonds, honey, milk, spices and salt. Mix until the contents are homogeneous.
  5. Pour the mixture over the dough and bake for 30 minutes.
  6. Once finished, you can decorate it by sprinkling a little cinnamon powder and adding some whipped cream on top. Let your imagination run wild!
